Balcones Distilling Education Experience
A program of the US Bartenders’ Guild
At the crossroads of craft, climate, and community, this year’s Into the Fault Line experience brought together Texas bartenders and cocktail enthusiasts for an in-depth exploration of place-driven whiskey with Balcones Distillery in Waco, Texas.
March 2026 – Over two dynamic days, attendees took part in interactive sessions, guided tastings while studying the “impact of climate” on whisky (map of flavors: Washington, Texas, Kentucky, Scotland), an unforgettable, interactive Fat-Washing cocktails lesson, a team-effort cocktail competition, and thoughtful conversations examining how environment, process, and innovation shape the character of American Single Malt.
Day 1: Arrival in Waco & Distillery Experience
The program began with a visit to Balcones Distillery to kick off the experience. Guests were welcomed into the space with an opening reception that led into an extensive, behind the scenes, distillery tour using back-end freight elevators, orange vests and safety goggles… All the makings for a good time!

Day 1 continued with rooftop happy hour providing a great view of the city, followed by some great food and great conversations.
Throughout the evening, participants engaged with the Balcones team, gaining insight into their production methods and philosophy, while sampling a range of expressions that highlight the distillery’s distinctive style.
To round out the night, attendees had a nightcap at a local venue—an opportunity to continue conversations, build connections, and reflect on the day’s experiences in a relaxed setting.
Day 2: Flavor, Technique & Texas Tradition
Day 2 began with Rhythms of Texas, an immersive session centered around a “Map of Flavor,” where attendees explored how climate and environment influence whisky across regions including Washington, Texas, Kentucky, and Scotland. The discussion offered a broader global perspective while reinforcing the distinct qualities that define Texas whiskey.
The group then headed to local favorite Helberg BBQ for a demonstration on fat-washing techniques, paired with a behind-the-scenes look at brisket preparation. Attendees observed how to properly trim and handle the cut before seeing how those same principles translate into cocktail applications—bringing together culinary tradition and bar technique in a uniquely Texas way.
The afternoon continued with a spirited (and only slightly competitive) tasting challenge, where participants sampled four Balcones expressions—Baby Blue, Lineage, Texas 1, and Texas Rye Bottled in Bond—and put their palates to the test among peers.
The experience concluded with a relaxed, family-style tapas dinner, set to the backdrop of live music from a beloved local band. It was the perfect close to a program rooted in learning, connection, and a shared appreciation for craft.
